Had this bottle a while back while celebrating my anniversary at Passionfish in Monterey CA.

Domaine Nowack is a newer producer for me but anytime I can find a new producer from Valle de Marne I’m here for it!

Right off the bat this wine was exactly what I was looking for for, I find with meunier based champagnes your fruit characteristics can rival those of the autolysis and reach the perfect balance of everything there is to love about champagne.

As of 2011 the wine maker Flavien Nowack has taken the reigns on his family estates in Vandières and offers a handful of different champagnes. I will say in my research though the La Fontinette seems to be their most sought after wine or at least the most popular on available in the US. Flavien takes a naturalistic approch to his wine by farming Biodynamic and organic, natural yeast fermentations. Interestingly he does not attempt any malo lactic fermentation in his wines.
